One is simple rasgullas and there are spongy rasgullas. The sweetness of this spongy rasgulla is spread abroad. The demand for this spongy rasgulla remains in foreign countries. Every year in Bikaner alone there is a business worth crores from Rasgulla.

Manager Balveer Singh told that it is sponge rasgulla. These Rasgullas go to foreign countries. It is bigger than an ordinary rasgulla. It is being sold in the market for Rs 260 per kg. As the price of milk increases, the price of these Rasgullas also increases. These rasgullas do not spoil in packing for about 6 months. Its demand increases in the summer season. They tell that 15 to 18 pieces come in one kg. This spongy rasgulla is of one to one and a half inch size.

This is how spongy rasgulla is made
Singh told that first milk is taken in a pan and then the milk is heated. Chhena is made after curdling the milk. After making Chhena, tablets are made by cutting it into small pieces. During this, sugar syrup is prepared and heated. After this these tablets are put in hot sugar syrup. As soon as these balls are heated, they start to swell up. After flowering it is cooled. After this they are again put in hot water. After this it is put back in sugar syrup and left.
